How to prepare a pineapple:
Preparing this fruit can be the trickiest part of successfully creating recipes with pineapple. Our online community for chefs recommends slicing the top and base of the fruit, and standing it upright. With a sharp knife, remove the peel in thin strips from top to bottom, then cut an additional single layer to remove the spines in the fruit’s flesh. Finally, cut the pineapple in half and remove the core from the center.
Pineapple cheese ball
2 8 oz. packages of softened cream cheese
8 oz. fresh pineapple, diced
2 cups chopped pecans
¼ cup green bell pepper
2 tablespoons finely chopped green onion
Mix all ingredients together, leaving one cup of pecans to the side. Portion into small circles, then refrigerate overnight. Roll each pineapple cheese ball in additional cup of chopped pecans for outer layer. Serve with crackers.
Grilled Chicken Pineapple Sliders
1 Lemon and 1 Lime – Juiced
1 tablespoon cider vinegar
3 Skinless boneless chicken breasts, cut in half
6 fresh pineapple rings
6 slices of red onion
2 tablespoons teriyaki sauce
6 Hawaiian bread rolls – toasted
Mix together lemon juice, lime juice, vinegar, salt, and pepper to taste. Add chicken to marinate for 1 hour in the refrigerator. Over medium high heat, grill each chicken for approximately 5 to 7 minutes. Grill each pineapple ring for 2 minutes on both sides. On Hawaiian rolls, spoon 1 teaspoon of teriyaki sauce, add a piece of chicken, pineapple ring, and a red onion slice. Serve warm.
Honey Roasted Pineapple
This simple dessert is a favorite of our online community for chefs: Cut a golden pineapple into long, thin wedges. In a separate bowl, heat 1 cup of fresh orange juice, and a ¼ cup of honey in the microwave for approximately 15 seconds. Pour the mixture over the fresh pineapple and let sit for 30 minutes.
Preheat the oven to 450 degrees. On parchment paper, arrange pineapple strips onto single layer and roast for about 10 minutes. After the pineapples are roasted, drizzle the remainder of the honey on top. Serve with vanilla ice-cream.
