Filet Mignon Bites with Tomato Chutney
1 (10-ounce) filet mignon steak
1 cup tomato chutney
1 teaspoon cayenne powder
½ teaspoon ground black pepper
2 tablespoons olive oil
1 teaspoon sea salt
1 sheet puff pastry, cut into 18 (3″)-disks
6 ounces’ ash-ripened chèvre
For garish: 2 sprigs fresh dill
- Place each disk of puff pastry on a pan lined with parchment paper. Top each pastry with a layer of tomato chutney. Bake for 10 minutes at 375 degrees. Then, top each slice with a thin layer of goat cheese and bake for another 2-3 minutes at 350 degrees.
- Season the filet mignon with 1 tablespoon oil, cayenne pepper, and salt. In a cast iron frying pan, sear beef on high heat for 2-3 minutes on each side. To keep the meat moist and tender, do not pierce it. Then, transfer the beef to the oven, set at 450 degrees and roast for 7 minutes. Sprinkle with sea salt and let sit for 10 minutes before slicing. Cut small slices of the beef to fit the pastries.
- Top each warm pastry with a slice of filet mignon and garnish with dill. Serve immediately!
